Halibut Caprese


Servings 4/ prep time 15 min. cook time 15-20 min

4 halibut filets (4 to 6 oz. each)
Sea salt and fresh ground pepper to taste
8 oz. fresh mozzarella cheese, cut into 8 slices
3 ½ Tbs. balsamic vinegar
1 ½ Tbs. extra virgin olive oil
8 large fresh whole basil leave of 16 small
2 medium tomatoes, cut each into 8 slices
1/3 cup chopped basil for garnish

Preheat oven to 450 degrees. Line baking sheet with foil and spray with nonstick spray. Place halibut on pan coat with olive oil and balsamic vinegar and broil about 6 inches from heat for 5-6 minutes until lightly browned. Turn filets over and season with salt and pepper. Broil additional 2-3 minutes. Cook just until fish is opaque color through. Remove halibut. Layer each filet with 2 slices cheese,2 basil leaves and 2 slices tomatoes. Return halibut to broil another 2-3 minutes until cheese melts. Blend the olive oil and balsamic together. Serve fillets and spoon over dressing and garnish with chopped basil. Serve with a salad and hope you enjoy!
